It is aged in a controlled cave environment for 1-2 years. This traditional cloth-wrapped, English-style cheddar is smooth, dense, and exceptionally rich, speckled with crystalline "crunchies." The cheese boasts toasty, nutty, and sweet caramel flavors underlined by a lingering earthy finish. Perfect on a cheese board, it pairs well with crusty bread, apples, or robust red wines.
