Canestrato is a traditional Italian cheese made from sheep’s milk or a mix of sheep’s and goat’s milk. It takes its name from the woven baskets (canestri) used during production, which leave a distinctive ridged pattern on the rind. The cheese is aged for 90 days to one year, with the rind color varying from golden yellow to dark brown. As it ages, the texture becomes hard and dry, while the flavor intensifies, developing nutty, tangy, and strong notes.
