Classic Blue Log

The Classic Blue Log is a surface ripened, soft cheese made from pasteurized goat's milk, produced by Westfield Farm in Hubbardston, Massachusetts, US. The cheese is coated in a cashmere shawl of soft grey Roquefort mold. This cylindrical shaped log is aged for about two weeks. The interior paste under the rind is creamy, clean and soft with tangy taste.
