Condio is made from pasteurized cow's milk by affineur Sergio Moro in Piave Valley, Italy. This historic cheese dates back to the late 7th century when the region was known as the Most Serene Republic of Venice. Condio, meaning 'seasoned', is a cheese aged for minimum three months. It is rubbed with spices, such as oregano, basil, mint thyme, marjoram, sesame and parsley, to create a spicy-flavoured cheese.
