Counting Sheep…and Goats and… cheese is a blend of three kinds of milk – sheep, goat and cow. It is a soft-ripened cheese that is traditionally aged on hay. This result in a white and soft rind with the aroma of hazelnut whiffs from the surface. Inside is a creamy and sweet paste that pairs well with white or young red wines.
