Cheesemakers around the world use traditional Dutch techniques to produce Gouda, resulting in a wide array of varieties. One popular option is Gouda made from cow's milk. Cow Milk Gouda (or simply Cow Gouda), a semi-hard cheese, is a versatile option with a creamy texture and a nutty, slightly sweet flavor that intensifies with age. Made from pasteurized or raw cow’s milk, young Gouda, aged for about four weeks, is mild, creamy, and ideal for melting or snacking. Older varieties, known as Aged Gouda, are crumbly and sharp, often featuring crunchy crystals. Gouda pairs beautifully with wines like Chardonnay or Riesling, as well as Belgian ales. It’s delightful when served with fresh fruits, nuts, honey, or crusty bread.
