Cubetto

Cubetto means cube in Italian, is a fresh cheese made by a Casa Madaio dairy farm in Cilento, Campania, Italy. Chopped olives are added into the fresh cow and buffalo milk to produce this cheese. It has an intensely sweet flavour with a hint of olives. This compact, smooth cheese is ivory in colour, speckled with small pieces of olives.
