Delice des Fiouves

This cheese is made solely within the Doubs region of France. It is available only in autumn or fall as the milk comes from the summer-grazing cows. This cheese has a round shape and the period of ripening is about three to four weeks. The rind is washed regularly with whey which gives the cheese a delicate taste and soft & supple pate. It tastes delicious with a glass of red wine.
