Derby is a semi-hard cheese made from cow's milk. It has a mild flavour and creamy ivory to a rich yellow pate. It is sometimes compared to mild cheddar because of the texture, but Derby is milder with a buttery, creamy flavour and strong melting ability. Only a few farms in England make Derby cheese the time-honoured way. Traditional Derby matured for nine months and has an open texture with a smooth, creamy body and a nutty flavour. Due to its melting characteristics, it is used in many dishes. It goes well with fresh fruits and Chenin Blanc or Sauvignon Blanc.
