It is an excellent hard sheep's milk cheese that usually has a boulder shape. The cheese has a sweet taste and the flavour suggests a hint of blackcurrants and a delicious, almond finish. This cheese is named after Friesland Islands, where it is originated. The period of maturation takes from six to ten weeks.
