Fuzzy Wheel

Produced by Twig Farm in Vermont, Fuzzy Wheel is a bloomy rind, aged cow and goat's milk cheese developed by cheesemaker Michael Lee. Coated by a fluffy grey mould called poil du chat (cat's fur), the interior is ivory white in colour with firm yet supple texture, dotted with small 'eyes' or holes. Flavours are evocative of butter, milk and cream with earthy undertones.
