Gracie Grey

Gracie Grey is a cow's milk cheese from the Lombardy region of Italy, imported and sold by Fifth Town Artisan Cheese. It is named for the natural grey rind, which has been brushed and maintained by hand. The cheese is aged 1-4 months in the cellars to develop a soft homogenous paste and sweet buttery flavour.
