Gubbeen
Gubbeen is a semi-soft, washed rind cheese produced by Tom and Giana Ferguson at their Gubbeen Farmhouse in Schull, Country Cork, Ireland. Made from pasteurized cow's milk, it boasts a pinkish-white rind and a pleasantly elastic texture. The flavours of the cheese intensify as it matures, when young, it features a rich, buttery, and milky taste accompanied by hints of meadow flowers and hazelnuts. Matured Gubbeen develops deeper notes of mushrooms and nuts.
