Based on a Dales-style of cheese, it is matured for 4 to 6 months before being marinated in extra virgin olive oil and coated in cracked black pepper, then left to mature for an additional month. This smooth-textured cheese boasts a multi-layered, complex taste with a fiery kick. Pair it with the faintly honeyed notes of a glass of chilled Pinot Grigio to complete the taste experience.
