Aged for 3-5 weeks, its flavor starts as mildl when young, developing a sharper, more intense profile as it matures. This naturally rinded cheese is covered with a mix of green, blue, grey, and white molds, giving it a distinctive character. Due to the colorful, textured rind the cheese stands out on any cheeseboard.
