Laganory
Laganory is an artisanal cheese made with vegetarian rennet and raw, organic cow's milk. This tomme-style, hard cheese is produced by David and Wilma at the Ethical Dairy near Dumfries, Scotland. Its slight acidity contributes to a pleasant crumbly texture, sharp and tangy flavour, and a fruity finish. Laganory is typically aged between 2 to 6 months. As it matures, it tends to acquire a drier and more crumbly texture.
