Livarot AOC cheese, from the Calvados region of Normandy, France, holds the Appellation d'Origine Contrôlée (AOC) status. Made from unpasteurized cow's milk, this cheese is known for its cylindrical form and glossy reddish-brown rind. The cheese undergoes a washing process during production, contributing to its strong aroma and full-bodied flavour. Its distinctive appearance includes a cylindrical shape with the rind wrapped in five strips of sedge leaves, preventing bulging. This unique feature has earned it the nickname 'le colonel,' inspired by the resemblance of the strips to the stripes on a colonel's uniform.
