Metronome is a soft-ripened fresh cheese made from pasteurized goat and cow's milk, made by Andante Dairy in California, United States. This pyramid shaped cheese with flat top has a typical tang of goat's milk. A firm texture near the edges with a pale yellow, creamy, smooth paste makes this cheese very special in taste. It has a typical yet subtle goaty tang and a melt-in-the-mouth taste that intensifies as the cheese ages.
