Olde York, a soft white cheese made using the coulommier method by Shepherds Purse Cheeses in Yorkshire, England, is made from pasteurized sheep's milk and vegetarian rennet. The process involves gently layering the curds into moulds and allowing the cheese to set under its own weight. The final product boasts a delicate texture and creamy spreadability. To preserve its fresh flavour and texture, the cheese is wax-coated.
