Peau Rouge
Peau Rouge is a washed-rind hard cheese that must be aged for at least a year to develop a characteristic aroma and flavour of grilled hazelnuts, evocative of caramel. It is a crumbly cheese with a creamy yellow paste and orange-pink and moist rind that gives off a fairly pronounced aroma. This cheese is excellent for pizza or pasta dishes.
