Pecorino Ginepro
Pecorino Ginepro is an Italian cheese made from pasteurized sheep’s milk. It is bathed in balsamic vinegar and juniper berries, then aged in oak barrels for up to three months. This unique maturation process gives the cheese a dark reddish-brown rind and a bone-white, grainy, flaky paste. The full-flavored cheese has a fruity, woodsy aroma with hints of juniper.
