Pitchfork Cheddar
Made using traditional methods and a traditional recipe, Pitchfork Cheddar is handmade with unpasteurized cow's milk by the Trethowan Brothers in Somerset, England. Each cheddar is carefully cloth-bound and matures over 12 to 14 months. The name 'Pitchfork' originates from the actual pitchforks employed to blend salt into the curds during the cheese-making process. The cheese won "Best Traditional Cheddar" at the British Cheese Awards 2024. This cheese is produced with Jersey cow’s milk, typically used for softer cheeses, resulting in its moist, smooth, and creamy texture. On the palate, a tangy flavour profile develops, complemented by a subtle nuttiness.
