Made from unpasteurized goat's milk, the cheese undergoes ageing for approximately 4 to 5 weeks. During the ageing period, it develops a smooth, creamy texture and a distinctive aroma. Plancherin d'Arêches is wrapped in a delicate band of sapwood, imparting a subtle woody flavour to the cheese. The cheese pairs well with robust red wines or hearty brown ales.
