This cheese is no longer being produced. Prairie Rose is an artisan, semi-hard cheese from Iowa, USA. Made from pasteurized cow's milk, this Swiss-style cheese has a smooth, creamy texture and a mild flavor. Produced seasonally from May to September, the wheels are aged for at least ten weeks to develop their rich character.
