Prima Donna Maturo is an aged variety of Prima Donna cheese, offering a rich, nutty, and slightly tangy flavour with a hint of spiciness. Aged longer than Prima Donna Fino, it develops more sweetness and protein crystals with a hard texture. This firm cheese melts well and is excellent for cooking. It pairs beautifully with red wines like Merlot or Chianti, as well as fresh fruits and nuts.
