Rosso Pecorino
Rosso Pecorino (Pecorino means ‘of sheep,’ and Rosso means ‘red’) is a sheep’s milk cheese from Italy. It is aged for 2–3 months, during which it develops a firm and smooth texture. The red rind is achieved by coloring it with tomato pulp and olive oil. Pecorino Rosso boasts a rich, deep flavor that lingers on the palate. This cheese stands out on a cheeseboard and tastes excellent when grated over pasta. It pairs beautifully with Chianti.
