Sofia is a fresh, soft, elongated brick-shaped goat cheese, dusted with vegetable ash to reduce acidity. It features a decorative ash layer running through its center. After two weeks of aging, a white coat develops over the black ash. Sofia boasts a delicate, smooth texture and a tangy, lemony taste.
