This is a firm, smooth and pure white cheese that has small holes throughout the paste. Since it is matured in brine, the taste is salty, creamy and mildly goaty. It has a high melting point and can hold its shape during & after cooking. The cheese is suitable to be crumbled on salads and sandwiches.
