Tymsboro
This cheese is no longer in production. This was an artisan cheese from Mary Holbrook made from unpasteurised goat's milk. The cheese used to produce in the shape of a flat-topped pyramid. It had a natural grey rind with blue-green moulds, smooth creamy and dense texture. It had a herbaceous, lemony and nutty flavour. Maturation peirod was two to four weeks.
