Ubriaco di Raboso
Ubriaco di Raboso is an Italian semi-hard cheese made from pasteurized cow’s milk. It is washed and aged for several weeks in Raboso IGT wine, a bold, tannic red wine from Veneto. This aging process gives the cheese a deep purple rind, a fruity aroma, and a tangy, wine-infused flavor. It has a gentle yet full-bodied pale yellow paste with small holes, enveloped by a ruby-red rind and a pleasant winey aftertaste. Ubriaco di Raboso is one of the drunken cheeses (ubriaco means "drunken" in Italian), which are aged in wine or grape must.
