Fresh Pyramid, a Richard Thomas invention, is an Australian cheese made from goat's milk. Produced by Yarra Valley Dairy, it is a fresh plain soft cheese available in a traditional pyramid shape. It can have a moist and slightly salty flavour with undertones of mild acidity and gentle tang. There is no better match than caramelized figs, rye or sourdough bread, waxy nuts and Fresh Pyramid. Dry Riesling, Sauvignon Blanc, Viognier, Cider will serve as a good accompaniment for Fresh Pyramid.
