Zamorano DOP (PDO) is a renowned Spanish cheese made from raw sheep's milk in the picturesque region of Zamora. This hard cheese takes nearly six months to reach its full potential. It has a pale-yellow hue and a delightful crumbly texture. Notably, Zamorano features a distinctive zigzag pattern on its rind and a cylindrical shape, similar to other cheeses like Castellano or Manchego. Its characteristic flavor comes from the milk of Churra and Castellano sheep. This sweet, nutty, and salty cheese is often served as a table cheese with white, red, and Zinfandel wines. Zamorano Gran Reservais aged for up to 18 months. Due to the longer maturation period, the cheese develops a sweet yet meaty flavor with hints of nuts and white chocolate.
